Culinary Operations Apprenticeship

  • Why Choose Culinary Arts? — If you enjoy the art of cooking and using your skills to please the taste buds of others, culinary arts may be for you.
  • What Will I Learn? — You will gain experience in all aspects of meal preparation as you develop understanding of the basic principles of nutrition, dietetics and food and beverage composition. Through a combination of classroom instruction and hands-on cooking, you will learn about the proper use, safety and maintenance of industry equipment. Students must be employed full-time in a food service establishment under the direction of a qualifi ed supervising chef. This program is open to high school graduates (or equivalent) who are at least 17 years of age.
  • How Much Will It Cost? — The estimated cost for tuition (Florida resident), uniforms, books, lab fees, other materials and a tools-of-the-trade kit is approximately $7,600 per year. Contact IRSC for non-Florida resident fees. Financial Aid is available for those who qualify and meet Financial Aid application deadlines.

Culinary Management

  • What will I Learn? — You will gain practical experience in culinary techniques, knowledge of safety and sanitation, knife skills and cutlery, weights and measurements and basic food preparation, including baking, soups and stocks, meat fabrication, vegetable preparation, banquets and more. In addition to instruction in classic culinary techniques, you will learn about modern cuisine, leadership, management, entrepreneurship, budgeting, purchasing and more. You’ll be prepared for industry certification exams offered through the National Restaurant Association.
  • How Much Does It Cost? — Through a partnership with the American Culinary Federation (ACF), the Culinary Operations Apprenticeship program only accepts and is tuition-free to those who are both: employed in the culinary industry and paid members of the ACF. Graduates of the program are prepared for certification from the Federation.
